If you and your family are on the Banting wagon, like the rest of South Africa seems to be, you might be missing sweet treats and desserts. The good news is that there are plenty of alternative foods and ingredients that are Banting friendly and can be made into delicious desserts.
Chia seeds are popular food due to their high nutrition content, low calorie content, and their ability to be used in a variety of dishes. They can absorb many times their weight in liquid and form a “gel” which is high in fibre and very satiating. This gel is an excellent in baking and desserts because it helps to hold ingredients together. It can also be used to make a tasty chia seed pudding that is so healthy that it can be eaten for breakfast too!
Chocolate Chia Pudding with Fresh Fruit
• 1/4 cup chia seeds
• 2 Tblspn cacao powder
• 1 tspn vanilla extract
• 2 Tblspn xylitol OR raw honey
• 1/2 tsp ground cinnamon
• 200ml almond milk
• 200ml water
• Fresh fruit
• Mix all ingredients together in a bowl and make sure everything is well combined
• Cover and refrigerate for 2-4 hours until it is a pudding consistency
• Serve with fresh fruit on top
