Fruity Jelly Sweets

This Fruity Jelly Sweets dessert will help if you trying to keep your kids off sugar,  are trying to avoid it yourself, it can also be difficult to find treats or snacks that are satisfying. If you have a sweet tooth you may be reaching for artificial sweetener, but luckily we now have healthy sweetener options like xylitol and stevia.

Gelatine is an ingredient that is getting more popular due to its ability to heal the gut and it provides amino acids. While plain old jelly may not be your thing, gummy sweets of various flavours are delicious and have a great texture.

Homemade jelly sweets are healthy, easy to make and your kids will be begging for more.

Ingredients

• 1 can coconut milk (no added sugar)
• 1 Tbspn xylitol granules or 20 drops of stevia liquid
• Seeds from ½ vanilla bean
• 1 cup purified water
• 1 cup mixed berries
• 3 Tbsp gelatine powder

Method

Place the mixed berries in a saucepan on low heat until they break down and mash them into a sauce. Add in the coconut milk, vanilla, xylitol and stir until well mixed. Mix the gelatine with the water and then add it to the fruity sauce. Pour into moulds and allow gummies to set. You can let them set in the fridge or the freezer. You can then remove from the moulds and store in a container in the fridge. These sweets will last about 2 weeks. Enjoy!
