Banting Sweet Treat Recipe

Summer is here and thanks to the Banting diet many of us are ready to hit the beach and the pool with our new bikini body!

To keep our figure in shape and not fall off the Banting wagon this summer, we need to stay away from ice creams and sugary cocktails. This low carb ice pop, or ice lolly, recipe is a great alternative to high sugar treats and the kids will love it too! Berries are very low carb fruit which are Banting friendly and provide us with a whole host of vitamins, minerals and antioxidants.

This treat will be refreshing for a summer spent by the pool with family and friends!

Mixed Berry Ice Pops

Ingredients

• 2 cup fresh rooibos tea (or other herbal tea of choice)
• 1/2 juice of one lemon
• 1 cup mixed strawberries and raspberries
• (optional) xylitol or stevia or honey to taste

Method

Let the herbal tea cool down and then stir in the lemon juice and sweetener (optional). Chop up the fruit and put desired amount into ice pop moulds. Fill the rest of the mould up with tea and place in the freezer. Allow to freeze until completely set – at least 5 hours.
