If you are adhering to the Banting diet, you might be missing the idea of enjoying a pizza on the weekend with friends and family. Perhaps this thought it actually stopping you from sticking to the diet. Fear no more, because the invention of the cauliflower pizza means that you can enjoy this favourite “junk food” but with a healthy and low carb twist.
1 medium sized cauliflower head
1 tablespoon almond flour
1/4 cup shredded parmesan cheese
1/4 cup mozzarella cheese
1/4 teaspoon Himalayan salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
Your choice of Napolitano sauce, cheese, meats, olives, vegetables, etc
Place a baking sheet in the oven and preheat oven to 230 degrees C.
On a cutting board, place a large piece of tin foil and grease with butter or olive oil.
Wash and dry a small head of cauliflower. Cut off the florets, you don’t use the stem. Pulse the dry florets in your food processor for about 30 seconds, until it is very fine and powdery. You should have about 2 or 3 cups of powdery cauliflower.
In a bowl add the cauliflower along with the rest of the pizza base ingredients and mix well. Use your hands to make sure everything is well combined. Then use your hands to shape the dough into a pizza base on the tin foil. Make sure it is tightly formed and not too thin or thick.
Put the tin foil with topped pizza back in the oven and cook for another 6-8 minutes or until the cheese starts to bubble.
Take it out the oven, slice it up and enjoy!
