Banting Christmas Biscuits (Recipe)

Christmas is around the corner and many people are frantically searching for Christmas cake and cookie recipes that they can enjoy without having to fall off the Banting wagon and gain loads of holiday weight.

Thanks to low carb flours and healthy sweeteners we can tweak traditional recipes and come up with great tasty spice cookies which will bring the holiday spirit to your Christmas party or gathering.

Even Father Christmas won’t be able to resist this tasty treat!

Ingredients:

1-1/4 cup almond flour
1 cup Xylitol
1/4 cup butter, at room temperature
1 large egg
1 teaspoon vanilla
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp salt
1/4 tsp bicarbonate of soda

Method:

Pre-heat the oven to 180C
Line a baking sheet with baking paper.
Stir together almond flour, cinnamon, ginger, nutmeg, salt, bicarb and xylitol until well mixed.
Blend in the butter, egg and vanilla until well mixed.
Put the whole mixture in the freezer for 10 minutes to let it chill. This will help the cookies to become crisp and retain their shape.
Roll into small balls and put them on the baking sheet and then flatten each one with a fork.
Bake at 180C for 8- 10 minutes, or until the biscuits have slightly browned.
Take them out the oven and let them cool before moving them onto a cooling rack.
