Low-Carb, Banting Eggnog Recipe for Christmas

Eggnog is a delicious and festive drink that many people enjoy at this time of year. There is nothing quite like drinking some eggnog with family and friends after dinner sitting around the braai (if you are in the summery southern hemisphere), or snuggling up in your Christmas sweater on the couch and enjoying it in front of the fire (if you are in the snowy northern hemisphere)

The trouble is that traditional eggnog contains plenty of sugar which rules it out for those of us on the Banting wagon or trying to lose weight on a low-carb diet. Luckily we have a tasty low-carb, Banting version of eggnog!

Low-Carb, Banting Eggnog Recipe

Ingredients:
250ml full-fat, organic cream
2 eggs (yolks and whites divided) – use free range fresh eggs as they will be raw
1/3 cup xylitol
1 teaspoon nutmeg
1/2 teaspoon vanilla
Pinch of cinnamon
Brandy, Rum or Whiskey (of your choice)

Method:
Separate the egg whites and yolks and then use a beater to blend the egg yolks well
Add xylitol, cream, nutmeg, and cinnamon and beat well
In a separate bowl beat the egg whites until they form soft peaks
Mix the egg whites in with the other mixture
Chill the mixture in the fridge
Pour yourself a glass and add 20-30ml of rum, brandy or whiskey before drinking
Enjoy!

Note that some rum contains added sugar so read the label to make sure yours does not. If you do not want to add alcohol to your eggnog that is fine too, it will still taste great!
