We all love muffins, here is a paleo/banting recipe for spinach and feta muffins which taste awesome and can be used as a snack as well.
1 cup grated cheddar cheese
½ cup melted butter
½ teaspoon salt
¾ cup coconut flour
1 wedge of feta
1 ½ cup spinach, raw and chopped finely
- Mix eggs, cheddar and butter.
- Add salt and coconut flour and mix well.
- Add spinach and feta and mix well.
- Spoon into muffin tray.
- Bake at 180C for 20 minutes.
- Makes 6 large muffins.
