Feel like pizza? For the Vegetarians, actually for everyone, here is a simple low-carb recipe that that is quick to make and a can replace those heavy duty pizzas on a Friday Night.
Ingredients
- 420g mozzarella cheese
- 1 kg cauliflower
- 50g parmesan cheese
- 2 eggsHimalayan salt
- freshly ground black pepper
- dried italian herbs
- 1 tbsp avocado oil
- 1 tbsp tomato paste
- pinch paprika
- 2 garlic – Optional
2 cups tomato passata - 4 cup caper berries
- 2 red onions
- 1 avocado
Method
- Preheat the oven to 180°C and line 2 baking sheets with greased baking paper.
- For the base: Grate the cauliflower, then steam until soft and set aside until cooled. Wrap the cauliflower in a clean tea towel; squeeze and twist to remove as much water as possible.
- Place the cauliflower in a bowl. Add the 220g grated mozzarella cheese, grated Parmesan, beaten eggs, salt and Italian herbs. Stir well to combine.
- Spread the cauliflower cheese mixture on the baking sheet. Shape the mixture into a crust that’s fairly thin but has no holes. Bake for 15 minutes, remove from the oven and allow to cool slightly. Preheat the oven grill, flip the base onto a second greased baking tray, and grill until the “underside” is golden and crispy. Remove from oven.
- For the tomato sauce: heat oil in a pot, add the tomato paste, paprika and crushed garlic, cook for 2 minutes. Add the passata and season to taste, simmer for 5 minutes, then set aside. Top the base with spoonfuls of tomato sauce, sprinkle with remaining torn mozzarella, roasted red onions quarters and caper berries. Grill for 5 minutes, remove from the oven and top with avocado slices, allow to rest for 5 minutes before slicing.
